Baccala, Salted Cod

Description

This is a noble fish dating back hundreds if not thousands of years, way before the advent of proper refrigeration. It is a simple process of salting beautiful Cod to remove moisture, which will preserve the fish for years if desired. 

The nice thing about this is that it changes the texture and adds a certain umami that is very pleasant when you are making Cod cakes or certain baked Cod dishes. It is a staple around the Christmas holiday season, but we like it all year round.
